INGREDIENTS
4-1/3 pounds Norwegian Salmon
Sauce
1-1/4 cups lemon juice
2/3 cup soy sauce
1/3 cup white wine
1-1/4 cups sugar
2-1/2 shallots
7-1/2 cloves of garlic
3-3/4 tablespoon ginger, fresh root
2-1/2 tablespoons butter
2-1/2 ounces cornstarch, or as needed
1/3 cup butter
15 scallions
2/3 cup crème fraîche
Salt and pepper

PROCEDURE
Cube the Norwegian
Salmon into 3/4-inch pieces and place on bamboo skewers. Put the
lemon juice, soy sauce, wine, suger, shallots, garlic and ginger
in a blender and run for two minutes. Marinate the skewers in this
sauce for 12 hours. Let the marinade drip off and grill or pan-fry
the skewers until medium. Boil the rest of the marinade, whip in
butter and add cornstarch to thicken the sauce. Slice the scallions
and steam with a touch of water and butte, strain and crème
fraîche. Season with salt and pepper. Serve Norwegian Salmon
and sauce with salad or rice. Top with fried potato straws.
