Norwegian Salmon with Sesame Oil and Soy Sauce

INGREDIENTS
 
10 5-ounce Norwegian Salmon Fillets (1/2 - inch thick)
10 teaspoon Oriental sesame oil
10 tablespoon soy sauce (light)
10 drained capers
10 tablespoon golden raisins
Fresh ground pepper

GREEN PEPPERCORN TERIYAKI DRESSING

1/4 cup soy sauce (Light)
1/4 cup Mirin
1/4 cup sake
1/4 cup rice wine vinegar
2 table spoon drained green peppercorns, minced or lightly crushed
1 medium garlic clove, minced
1/2 cup vegetable oil

PROCEDURE

Spread plates with oil, placing salmon in middle. Sprinkle soy sauce, capers, raisins and pepper on top of salmon. Cover with foil or wrap in parchment paper, and cook in 350 oven 2-3 minutes. Serve with basmati or jasmin rice and a green salad with green peppercorn teriyaki dressing. For dressing, whisk all ingredients together.
