Dijon mustard
Honey
Lemon juice
Focaccia, 4" x 4" square, split
Eggplant, sliced, grilled
Zucchini, sliced, grilled
Yellow squash, sliced, grilled
Vidalia onion, sliced, grilled

PROCEDURE

To prepare the sauce for the panini, combine mustard, honey and lemon juice. Hold.

To assemble each panini, layer on the bottom half of one focaccia, I slice eggplant, 1 slice zucchini, 1 slice yellow squash, 1 slice onion and 1 3 oz. piece of salmon. Top with 2 oz. panini sauce and top half of focaccia. Cut in half on a diagonal.
