PROCEDURE
To prepare the
sauce for the panini, combine mustard, honey and lemon juice. Hold.
To assemble
each panini, layer on the bottom half of one focaccia, I slice eggplant,
1 slice zucchini, 1 slice yellow squash, 1 slice onion and 1 3 oz.
piece of salmon. Top with 2 oz. panini sauce and top half of focaccia.
Cut in half on a diagonal.
